Steamed milk for espresso?!


Question: Steamed milk for espresso?
I know that we're supposed to use steamed milk, but i don't have anything to steam, so can I use microwaved or boiled milk?
And what type of milk makes the good espresso? regular milk, half and half, or skim milk?

I think that i know that we supposed to use steamed mike.



Without getting too complicated, it's not a matter of the milk being hot, but a matter of air being injected into the milk that makes a latte or cappuccino what it is. Regardless, if you want your espresso to stay hot when you add the milk, then yes microwaving or warming on the stove-top would be fine, but generally a latte or cappuccino is made by steaming the milk and injecting air, thus giving it body and creating the foam associated with each drink (latte = small amount of foam, cappuccino = 1/3 foam).

That being said you could always buy a frothing wand, which will froth the milk (making foam) and it's usually $10-15. You put the milk on the stove, get it warm, and stick the wand in and turn it on.

As far as what milk is used, any milk works. Most use whole milk or 2% as their default. Using half and half would be considered a breve, which is much more rich. Hope this helps!
