Now, to the taste:
Canned coffee is stale, so it tastes more bitter. Fresh ground tastes best. Instant has the weakest flavor, so you could try it. If it turns out you don't like instant (I don't), it can be used in baking recipes so it won't go to waste.
Lighter roasts are naturally sweeter (coffee darkens as the sugars in it caramelize) and island coffees, such as Kona or Jamaican, are milder. Steamed milk is sweeter and won't chill it down. You can heat the milk in a pot on the stove (just whisk while heating) and skim won't add tons of calories. That way you can reduce or eliminate any extra sugar.
Lastly, paper filters remove most of the oils that give coffee a stronger flavor and thicker paper is more effective.
To summarize:
Light-roasted, island coffees, drip-brewed with a thick paper filter, with steamed milk will have a mild, delicious flavor, with plenty of antioxidants and without tons of calories.
Avoid espresso since it will have the strongest flavor and will bother you more if you're not a big coffee fan.
