Long answer: Because the cookie monster is a symbol of our modern day American lifestyles. Gorging ourselves in sweets and junk foods,destroying our once beautiful bodies and making them giant chunks of blubber. And we keep eating those damn cookies until we get diabetes and can no longer eat sugary items, much like the cookie monster now, forced to eat healthy items.

Could you imagine what the world would be like if the the cookie monster didn't eat cookies? it would be a sad sad world. and cookies are the best evah!! cookie monster is so awesome! he's literally obsessed with cookies. He's the cutest little monster ever! And like he's makin some big money; he's on hats, t-shirts, television, everywhere! Not only is he just the cutest little guy ever but, he's a good deed do -er. Do you know how many small children he's taught the alphabet to? what a good soul...

Because he's the COOKIE monster? :P He is a monster who is obsessed with cookies... It's Sesame Street, it doesn't have to make sense. He doesn't eat that many cookies anymore anyway because the rise in childhood obesity means that Sesame Street has to teach children that cookies are "a sometimes food".
Because cookies are AMAZING! They are so yummy yummy yummy. And if he is a cookie monster then he will just want to eat every cookie in the world. YUM!
