You will crash when you come down, but the effect are minor a headache and slight mood swing your energy level will seem lower and so will your mental alertness. Drinking to much Red Bull can also effect your sleep patterns so withdrawing it can make you sleep longer to catch up.
The best way is to reduce your intake slowly over a number of days and avoid other sources of caffeine such as chocolate coffee and cola.
