just curious..but if we keep drinking spring water wouldn't it eventually run out?!

No. It will still be there (not counting drought or climate change). But eventually too many people will be trying to get the same amount of it. Called a shortage.
Actually that's a good question and covers the whole "water cycle" process on earth---all the water/moisture on earth just keeps cycling above and below ground but certain springs and groundwater sources can definitely pretty much "run out" so it gets more complicated.
