Barista tips and tricks?!


Question: Barista tips and tricks?
I just got a new job at a coffee shop (I've worked in a few different coffee shops for years and years now) My new boss is telling me that as soon as the espresso is brewed it has to be added to the milk, or it kills the espresso shot...(I mean, I can't let it sit for 30 seconds while I steam the milk.) Is this true or is she full of it? I've never heard that before and never had any complaints. She was making me dump the espresso and make new if it sat for longer than about 5 seconds...Just Curious!

I've never heard anything like that when making coffee. Your boss is probably just talkin' bull to scare away new employees and only keep the hard-core ones. Just go along with what she wants, even if it doesn't make sense. I've had to do this before, and it's worth it if you can keep your job.
