The roasted beans were quickly raked from the embers, ground up, and dissolved in hot water, yielding the world's first cup of coffee. In 1587, Abd al-Qadir al-Jaziri compiled in his work entitled “Umdat al safwa fi hill al-qahwa” the different legal controversies as well as the history of coffee. Based on that particular work, a certain sheik named Jamal-al-Din al-Dhabhani was the very first individual who adopted coffee in the Muslim world. The beverage was widely used by the Sufis during that time in order to drive away sleep.

From Yemen as the starting point, coffee found its way to Yemen as export. In 1554, the very first coffeehouse started somewhere in Istanbul. During that time, the beverage was not received well by the people. In fact, the conservative people during that period banned the drink in many places mainly because of its stimulating effect. In 1524, Ottoman Turkish Sultan Selim-I lifted the ban on coffee.

Based on Leonhard Rauwolf’s 1583 account, the beverage became available in England through the efforts of the Dutch East India Company and the British East India Company. The very first coffeehouse in that area was established in Cornhill.

In Austria, the first coffeehouse started in the City of Vienna in 1683. It was established right after the Battle of Vienna, where the country received supplies from the defeated Turks. The military officer named Jerzy Franciszek Kulczycki was the recipient of the coffee beans. He started the coffeehouse. He also started the custom of adding milk and sugar to the coffee in order to give it a more pleasant taste and flavor.

Melitta Bentz experimented with different materials, until she found that her son's blotter paper used for school worked best. She cut a round piece of blotting paper and put it in a metal cup.
On June 20th, 1908, the coffee filter and filter paper were patented. On December 15th, 1908, Melitta Bentz and her husband Hugo started the Melitta Bentz Company. The next year they sold 1200 coffee filters at the Leipziger fair in Germany. The Mellitta Bentz Company also patented the filter bag in 1937 and vacuumpacking in 1962.

Its hard to believe that at one time you could not wake yourself up with a strong cup of stimulating caffeine filled coffee. So where does coffee come from?

Dating back to the 15th century in the far east are legends that say coffee was first discovered by a goat herder in the Yemen. He noticed that after eating the red fruit of the coffee bush his goats stayed awake all night.

Decaffeinated Coffee
Some wonder what the point is of taking the caffeine away but decaffeinated coffee was invented in 1903 by German coffee importer, Ludwig Roselius, who turned a batch of ruined coffee beans over to researchers. Although not the first to remove caffeine, they perfected the process of removing caffeine from the beans without destroying any flavour. He marketed the coffee under the brand name ‘Sanka’ (a contraction of ’sans caffeine’). Sanka was introduced into the US in 1923.

It may seem strange but coffee hasn't been around forever! In fact it was not discovered until around 600AD in the Middle East. It came to Europe in the 16th Century. In the 500 since it came to Europe, it has spread around the world and become an international trade.
