Coffee is acidic due to roasting and the caffeine. A smooth coffee is one where the acidic taste is much reduced. A decaf coffee has almost no acid at all and is very smooth taste. Folgers, by contrast, requires a TUMS after use to prevent stomach ulcers.
Smooth coffee would mean that it is not as bitter and that the bitterness does not remain in your mouth as long.
