area about the size of a dime with two very small holes in it. What is this for?

Answers:

Air is the enemy of fresh coffee.
The holes are to let the air out.

It's the "gasket" if you will to allow the device they use to vacuum pack the coffee to preserve flavor and freshness.

It lets air out of the bag, but not in to preserve freshness.
