Children of siblings are first cousins to each other as they share grandparents.

The removes come in when you are in a different generation coming down from a common ancestor.

so Great Grand children of the same person are 2nd cousins. However the relationship between
a G-Grandchild and a GG-Grandchild (if they are not parent and child) is 2nd cousin once removed

If the cousin giving birth is your first cousin, The baby would be your first cousin once removed. Or second once removed if the parent is your second cousin.
The once removed part means that the child is the child of one of your relatives.
