why does coffee make you poop?!
Answers:
Theobromine, a metabolite of caffeine, dilates the sphincter muscles and blood vessels. Also, per the chart at the link, see "xanthines" for additional info on the diuretic action.

Coffee and tea both contain tannins. Tannins are the same chemicals which are used to turn animal skins into leather. Tannins irritate the lining of your digestive tract to some degree, which causes stimulation of the muscles lining the digestive tract, which causes you to poop.
I am a physician with over 18 years of experience.
Coffee produces a laxative effect in susceptible people through stimulation of rectosigmoid motor activity, as soon as four minutes after drinking. Even modest doses of coffee can have this effect, whether or not the body is ready to dispose of the feces, resulting in loose stools. Studies show that decaffeinated coffee has a similar stimulant effect on the GI tract proving that the laxative effect is not only due to caffeine.
A combination of the Caffeine and the fact that it's a hot liquid.
P.S. Diuretic means it causes you to loose water, not poop.
