And if it doesnt compromise the taste then why not make all tea and coffee decaf?

I'm not sure how exactly they remove the caffeine but i know its done chemically.... but you can get natural de-caff tea.. like Red Bush. It does taste similar but some people prefer caffiene as it has "pick me up" qualities.. and some prefer without as caffiene can be addictive and its generally healthy to have it without. Also caffiene can reduce the amount of vitamins your body can absorb. There u go!

The darker you roast a coffee bean the less caffeine it has naturally but the flavor does change.
i read somewhere that the caffine come out of the tea the first 30 seconds after the water has been poured on, so if you empty the first cup then let the second one steep you should be ok, as for coffee sorry no idea

For people who want coffee or tea without caffeine, unfortunately you can't get rid of it all. But using steam, it's possible to extract 97% of the caffeine molecules...
Coffee, I don't know, but for tea, they use a particular sort of chlorine to 'bleach' out the caffeine.
And some people like or need the caffeine rush - not everyone likes decaf because it does compromise the taste - I won't drink decaf coffee because I think it tastes like pond water, and decaf tea, while very nice, doesn't have the same tasty comfort value of 'real' tea (but I'm not supposed to have caffeine... shhhh...)

Removing caffeine from tea
Tea has a relaxing effect and can be easily decaffeinated:
Add hot water to loose leaves and steep for 1 minute.
Discard the liquid.
This first brew contains most of the caffeine of the tea.
Add water to your teapot and let steep for 2-3 minutes and drink that infusion that has only small amounts of caffeine.
Over 80% of the caffeine is removed during the first wash of the leaves.
