Companies like Coca Cola and Pepsi insist that they add caffeine as a flavouring in their drinks (as it says on the can).

Yep it does! If you drink a can of caffeine free coca cola and then try coke with caffiene, you can tell the difference. However they may not actually use it as a flavoring, caffiene is addictive. If you're addicted to caffiene you'll probably buy more coke.
Not sure as I drink tea without it, and the taste and smell are the same,

If you buy some caffeine tablets from your local chemist to keep you alert they taste bitter if you don't swallow them quickly. So I say they taste bitter!
