Preparation Time: 10 minutes
Cooking/Baking Time: Chill Time: 30 minutes
Serves/Yields: 8

Ingredients
? cup fresh root ginger, grated
1 medium lime, sliced
1 ? Tbsps. cream of tartar (leveled)
24 cups (6 litres) boiling water
4 Tbsps. yeast, leveled
? cup water (luke warm)
2 lbs. (1 kg) granulated sugar

Method
Combine ginger, lime and cream of tartar, pour on boiling water.
Dissolve yeast in 1/2 cup of lukewarm water.
When ginger mixture is lukewarm, add yeast mixture.
Allow to stand for 2 days, skim, strain and sweeten with sugar to taste.
Put to chill before serving or serve over cracked ice.

Serving Suggestions:
Serve cold. Decorate with sprigs of mint and cherries.

Notes:
A few rice grains can be added to Ginger Beer to prolong shelf life.
Ginger Beer can be bottled ahead of time to allow for aging.
