Diet Coke, even over regular Coke let alone Diet Pepsi. It is highly acidic, which not only gives it a nice tart flavor but also helps with indigestion. Works for me anyway...
Of course, you could probably do the Mentos fountain with either one

If given a choice, I'd pick Diet Pepsi. On the other hand, I won't gripe over a Diet Coke, either; I like them both. Even Walmart cheapie diet drinks work for me--once you drink diet sodas for as long as I have, the regular stuff begins to taste like carbonated pancake syrup.
