Pepsin is a natural stomach enzyme that was prescribed for people with digestive problems. It was put in various drinks and concoctions which were then sold as "health beverages". One such drink was named after the enzyme was Pepsi. Several other fountain sodas like Moxie, Coca-Cola etc also had medicinal properties and were actually prescribed by doctors. None of the current day soda have any legit therapeutic value and are all nasty, unhealthy products.

No, it isn't used in cold drinks. Pepsin is a digestive protease released by the chief cells in the stomach that functions to degrade food proteins into peptides or in other words the stuff breaks food down.
