Boxed mixes usually have powdered milk in the mix

A friend of mine can not have milk her Mother taught me a trick yes you can use water instead of milk but take out 1/4 cup of the liquid and put in 1/4 to 1/3 cup of plain apple sauce it adds flavour and helps to bind things together

If you are substituting water for 2% milk, here is what you should consider:

2% milk is about 88% water, 4% protein, 2% fat, and 6% sugar/carb.

So if you use water--you will be missing the 12% of fat, protein, and carb. You could try to add a bit more sugar and fat to compensate if you would like.


It will work, but of course it won't be the same as milk. Milk also has a different Ph than water, so the acidity in the batter (which affects baking) will not be the same.
