A very sweet sugar, C6H12O6, occurring in many fruits and honey and used as a preservative for foodstuffs. Fructose is a monosaccharide (simple sugar), which the body can use for energy. Because it does not cause a high blood sugar rise (has a low glycemic index), it was once thought that fructose was a good substitute for sucrose (table sugar; cane or beet sugar), but the American Diabetes Association and nutritional experts have changed their minds about this.

Fructose is the sweetest naturally occurring sugar, estimated to be twice as sweet as sucrose.

Fructose is a naturally occuring sugar. Its typical found found in fruit. However when you combine glucose and fructose you get a product called surcose also known as table sugar. Its sweeter that regular sugar and colder temperatures, but as the temperature increased the sweetness degresses. Therefore fructose is ideal to be used in soft drinks but not for hot chocolate.
