I have to say that unless you are melting loads of chocolate, the system of tempering can be done at home. I often melt chocolate down but wondered why it went 'cloudy' once it had set. I referred to 'Green & Blacks' & read up on 'tempering.'

To do this at home for small quantities, you simply need to grate the chocolate down before melting in a bowl over boiling water (making sure the bowl does not touch the boiling water, but just sits over the steam of it.) Previously I had been simply breaking the chocolate into chunks & melting it. Because melting it in chunks takes longer, it means that some of the chocolate is heated for longer periods & this is what causes it to cloud over.
