Isn't 'raw' milk unhealthy?

I've been seeing some recipes with 'raw' milk as an ingredient. Doesn't pasteurizing it take all the bacteria out?


Answers:
It's not unhealthy.
What started it all is that cows can get tuburculoses and pass it via the milk. Way back when people commonly drank raw milk, they could actually get a form of TB if their milk contained Mycobacterium bovis. Pasturization removes harmful bacteria, including that one, and also allows for a longer shelf life. Unpasturized milk needs to be used within 3 days of milking... the milk you see at the store has a shelf life of up to 6 months (yeah, now you know how long it's been running around before hitting the shelf!).

Nowdays, all dairy herds are under strict TB vaccination protocol and a cow with TB is nearly unheard of, but due to the fact that it lengthens the shelf life by a million times, all the milk you see in the store is pasturized. The milk from a vaccinated herd is safe though. I grew up on unpasturized milk.

The difference? Well, pasturizing also removes most of the nutrients from the milk as well. You can literally taste the difference. I buy milk from a company that does vat pasturization (commercial ones all do steam pasturization) and it is ALMOST as good as the untouched stuff, and a TON better than the standard Borden milk.

this bacteria isnt necesarrily bad but pasterurizing makes the milk last longer.

Yes, pastuerizing is the procedure that removes bacteria. Drinking raw milk can be harmful sometimes but if you're cooking/baking with it then usually it's not a problem if you choose to do so since the heat factor is involved. However, I've never understood what the difference would be than to just use store bought milk, honestly.
