The ice is used purely to cool the liquid and nothing else. Martinis in particular are made this way. A Gin martini (the original ones) are stirred for two reasons, one: to make sure that ice doesn't chip into the liquid and compromise the flavour, and two; to keep the gin from separating from the vermouth and thus clouding the drink
Some drinks are mixed with ice, but you don't want the ice to "water down" the drink so you strain it out before it is served.
There are a number of reasons. The most prominent is when you are straining a martini (or any drink served "up"). They are mixed with ice, and so you strain away the ice.
You put it in a metal tumbler with ice to chill it quickly. Strain it to get the ice out, nobody wants diluted drinks!
