Some are cooked, some are semi-cooked, some are raw, some are steamed, some are just dried and grounded, etc. Don't worry too much about the color. If kept well, green tea will store for a long time even when the color change. However, for the really expensive green tea, you will want to drink it within 8 month of purchase for the very best flavor you've paid dearly for. Oh yeah, don't use boiling water to cook those expensive leaves either, 96C/205F will do.

it shouldn't try bottled water and it will be much better and wont turn other colors
