Well. You should really ask at a brewing shop, or ask a scientist, cause it would all be about chemistry. But what if you made it with fructose, the kind in grain form, like ordinary sugar? I don't know if it would ferment the same way as cane sugar, I don't know if it's possible it would turn into another type of sugar while fermenting, but that would be my best guess. Good ginger taste comes from real ginger, and there's nothing wrong with diabetics eating ginger.

I really have never bought any brands of diet, wether brand name or no name ginger ales in the markets that have not been good.

I buy Canada Dry and it is great. Schweppes, and all the no name brands are very good when it comes to taste.

I think you are talking about the deep spicy ginger-rich drink, not the light pale crisp soda.

I have never made it, but found many recipes online. You could find one that suits you and just replace the amount of sugar called for with a sugar substitute. There are alot of good tasting natural ones out there like liquid stevia glycerite, erythritol, xylitol, and agave
