it is a southern favorite breakfast drink, also used in france. chicory is a root vegetable that is a coffee substitute as well as a flavor enhancer. when people couldn't afford to use all coffee, they could add a little ground chicory to stretch the pot.

It was invented in the South by people who thought regular coffee wasn't bitter or nasty enough. YUCK!

You can buy it in products like Postum and a instant called "Encore", it came about when coffee was in short supply during the Civil War and there was a discovery by some of the soldiers of a root used by the slaves for a coffee substitiute. It is widely used in Europe and the Asian community, it is very popular in the south as stated, especially in New Orleans, at Cafe du Mode with beingets and they use it for the Vietnamese drip coffee with the condensed milk and ice.
