Ultra High temperature Processing is the partial sterilization of food.At a temperature exceeding 135°C (275°F), which is the temperature required to kill spores in milk. The high temperature also reduces the processing time, thereby reducing the spoiling of nutrients.Pasteurization is not intended to kill all micro-organisms (pathogenic) in the food. Instead, pasteurization aims to achieve a "log reduction" in the number of viable organisms, reducing their number so they are unlikely to cause disease. UHT seems to be the healthier choice. Infact, doctors recommend it over pasteurized milk.
