Vanilla extract has a higher concentration of true vanilla in it. Vanilla essence has less. And vanilla flavouring (yuk) has none at all. All usually have some alcohol and sugar in.
Vanilla extract uses the actual "extract" of the vanilla seed pod with an alcohol base and is intended for consumption as a flavor additive.
Some are synthesized and called essence (vanilla FLAVOR and not vanilla extract). Difference between night and day.
Some countries use "essence" in place of "extract" which would make them interchangeable.
Rule of thumb - either it says "Vanilla" or "Vanilla flavor".
