I would guess that there would be health regulations that had to be met with regards to your home kitchen, packaging, transportation, etc. You might want to start with your county health board, first, to make sure you meet these regs.
Visit and get to know your local coffee shop owners. If they are going to carry your products, they will want to know and trust you. Bring some samples.

If your recipes are original, then I would copyright them first (or whatever the correct legal term is)? Ask the manager who owns the shop and ask how you can get in touch with him or her so you can give them samples of your pastries. Sometimes they might want to buy the rights to the recipe so they can make it themselves and you can sign a deal where you receive part of the profits also. However, if they want you to make them, make sure you get a business lawyer to make out a contract so that you know you'll get paid. A lawyer or business planner can give you much more advice.
You can't ..there are major healthy and food regulations that will provent home made patries being sold to the public. You will need to take food prep courses, have a food handlers licenses, a business licenses, your kicthen will have to be approved to a catering kitchen, health inspector and so on and so on....
