EJ, I love the zest too :)

2boys4dogs- I remove the zest later because I don't want chunks either, lol.
I live in Morocco, lemons are cheap here :). 3 kg cost me around $1.20

Orf-I don't mean store bought concentrate, I mean the concentrate that you make at home.

Good call on the mint. Mint is a staple of life here in Morocco...I'll give it a try. It sounds yumm-o.

I take 3 kilo of lemons and zest them all. Squeeze them all. Add 2 cups of sugar. Let it sit overnight. The next day I strain it to remove the zest pieces, seperate the liquid concentrate into 4 equal amounts and freeze them.

I add 1 1/2 liters of water to one package of my homemade concentrate....tomorrow I am going to add mint!

I don't use the 'zest' but I do drop the whole 'squeezed peel' into the bottom of the jar I'm making my 'homemade lemonade' in ... for a one gallon jar of lemonade, you need at least 10 fresh lemons. 'Squeeze them' as much as possible (use a good hand squeezer) and put EVERYTHING, even the 'peel' into the jar. Add one cup of sugar, and 'stir' and let it 'sit' for at least ten minutes. Then add the 'cold water' and ice to make the gallon ... it's not as 'sweet' as some people like, but it's more refreshing ... serve with a 'sprig of fresh mint' in a tall glass, sit out in the sun or shade, and RELAX. Let someone else worry about making dinner ... I juice like 10 lemons and then add as much sugar and water as I like (I don't add too much because I like sour lemonade.) You can add lemon zest if your heart desires. Zest would mean tiny chunks in the drink..eew.

Personally I buy Country Time Lemonade and then add lots of fresh lemon juice to it, sometimes a little lime juice.

YUM

Lemons are too expensive to not use something other than fresh juice and water. me? I would squezze minimum of one lemon (small) per glass....twelve glass pitcher = twelve lemons ...ok so I squeeze em add ice water..sugar to taste....always came out pretty good..
peace When im the only person thats gonna drink it yes it gives it a more intense flavor I don't use concentrate. For 2 quarts, use 3 whole lemons. Wash them well, and cut in half. Juice them, and add the juice and halves to the pitcher. Then add the amount of sugar you like. I've heard of as low as 1 cup sugar, and as high as 3 cups sugar. Start low, and add 'til you get the taste you want.

Wow. I've never heard of home made concentrate. Here in the states, concentrate is available in the grocery store's frozen section. How do you make concentrate? I hate lemon zest. I think it has this bittery taste.
Here is a recipe
The juice from 4-5 lemons, 1 cup sugar, 6 cups of cold water. Blend together adding ingredients to your taste.[if u find it too sweet, add more water, if you want more sugar add more sugar]

Now an added ingredient that you must try sometime is mint.
Blend mint leaves with the lemonade mixture, it will be yellow- pale green in color. Trust me it is even better that pure lemonade.
EDIT: thanx sarah, make sure it is blended with the lemonade
you will feel the flavour more than simply putting the mint leaves in.
If you live in morroco, perhaps you already use mint with your tea. A friend made me try it and its really good. I don't make a homemade lemonade BUT I do make a homemade limeade and I use the WHOLE lime. If you'd like to take a look at the recipe i follow you can click on my profile to get my recipe website.
