How much simple syrup should I use to sweeten 2 qts of iced tea?
simple syrup - 1 part water, 1 part sugar, cooked to make a syrup.
If you do not like iced tea and are asking me why in the world I'm making it, if you use no sweetener or no cal sweeteners, or you use regualar granulated sugar, I don't really need your answers. Thank you for playing.

I can't exactly sweeten "to taste", I gag on the stuff.

Why are you making iced tea if you gag on it? I hope you were just tired and not dense because you are supposed to sweeten to taste the iced tea. You aren't supposed to sweeten to taste the simple syrup.
