Easy as pie. Get tomatoes. Acquire yourself a food mill. Put the tomatoes in the mill and turn the handle. Tomato juice comes out the bottom into a bowl. Seeds & skin stay in the food mill.

If you don't have a food mill then you can either roast (changes the flavor) or blanch the tomatoes to loosen the skins. Remove the skins and put the tomatoes through the blender.

If you are going to blanch your tomatoes, bring a large pot of water to a boil. Add a few tomatoes and boil them one minute. Remove the tomatoes to a large pan of ice water. After a minute or two the skins will just slip off.

If you're roasting them, put them under the broiler, turning to blacken them on all sides. Put into a plastic bag for a few minutes, then pull the skin off with your fingers.
