Which Milk?

Which milk would be better for you and for little kids? The homogenized milk or the nonhomogenized milk? Will they cause any health issues?


Answers:

There have been a number of studies that suggest that homogenizing milk is a bad idea.

As it comes from the cow, there are a variety of sizes of cream globules in it. The homogenization process forces the milk (and thus the cream) through small holes, which breaks up the cream globules into really small globules.

The small globules stay suspended in the milk, instead of rising to the top. However, because there's so much more surface area to small globules, it appears to affect the chemistry of the milk. A number of studies have been done which show that homogenized milk may cause hardening of the arteries, and other health problems. Homogenized milk goes bad faster, especially in the presence of light.

I can't find any studies that show homogenization to have any health benefits. Homogenization makes milk "thicker", and makes it whiter.

Non-homogenized milk also has more flavor.
