Answers:

We in Canada use a majority of sugar, the high glucose fructose is not made of corn but a sugar based sweetener, I know I was a chef for many years and our pastry chefs used glucose made from sugar for sweetening and to make sugar showpieces.

In the US it is Corn sweetener(s) for the simple reason it is cheaper, but with all the corn going for ethanol production, at some point they may have to return to real sugar.

That is why all regular coke and pepsi products in Canada are considered kosher, corn is a fermentable grain and is not kasharuth.
