Does coffee lose it's potency???!


Question:

Does coffee lose it's potency???

The packages always say to use the bag of coffee within a week or so of opening it. I don't drink that much and I didn't really expect it to go bad that fast, but I noticed that the following happened:

When I first bought the coffee, I'd mix 3 Tbs. to 12 oz. water (2 cups) and after about 3 weeks, I'm mixing 5 Tbs. and it's tasting like hot water! I am just using a flavored coffee - nothing too strong.... is this normal? What is your tried and true method for storing coffee?

Freezer, tupperware? If you buy the beans and grind them fresh each night, do the beans last a long time or do they need to be used within a week, too????

I'm kind of new to the whole coffee thing - the last 3 years have been spent having kids and now that I have two of them, I am in dire need of coffee in the morning - I was just surprised that I could make such a good cup of coffee one day and such a nasty cup a few days later!!!

Also, I use a percolator. Last time I bought coffee it was the Millstone french vanilla and I ground it myself in the store.

I don't know if I really like the Starbucks - it seems too bold for me....

I am finding that I think I like strong coffee, but not bold coffee...does that make sense???? Any suggestions to making a better cup of coffee?

I keep mine in the refrigerator or freezer. I used to grind them at the store, but I have noticed that it seems to taste better when I grind it right before making a pot. I use a little electric grinder like you'd use for spices (I only use it for coffee though). I have an electric coffee maker, but I just received a coffee press as a gift and it makes GREAT coffee! Richer. Yes, coffee does lose it's potency. It is highly advisable to grind Coffee just before preparing and store the rest of the beans in an airtight canister in a cool, dry place.

If you're using a Brewer machine, switch to a Coffee Press as you can actually taste all the natural flavours of the Coffee.
