What happens to juice when opened but not refrigerated?!
I'm referring to a long period of time (3-6 months, even more)
Answers: Opened juice, not refrigerated but in a cold room (Winter would provide colder temperatures of course, summer would be warmer).

It begins to ferment and it can turn into alcohol especially orange juice, apple juice and grape juice, along with cranberry and pomegranate juice. Even if it is cool eventually it will heat up ferment and most likely haveing some bacteria or some microbes around it.
It would start to ferment.
Without being in a controlled cold temperature, it would begin to grow mold/ bacteria it would not be drinkable without the right ingredients for proper fermentation. I would throw it out.
it'll turn rancid within days, you won't be able to take a sniff in three to six months!
Sounds like a recipe for Apple Jack! For 1/2 gallon of apple, grape or orange juice, add 1 cup of sugar and a pinch of dry yeast for better results. Keep at 65-75 degrees for 4-8 weeks until the bubbling stops and the juice gets fairly clear. BTW, you may want to exchange the lid for a balloon while the juice is fermenting or the bottle may explode....LOL!
