Difficult question for ya, describe the taste of coffee?!

Question: That would be as defining as "What does soft drinks taste like."
I am assuming you are a single supply type coffee drinker.
The problem with the question is that there are almost as many coffees as there are countries. There are different varieties, and different roast degrees. For instance some Ethiopian coffees have the taste of blueberry's in the cup, another has a leather taste. Many South American coffee's have a chocolate flavor and some have a sweet citrus twang to them. Guatemala's can have a bittersweet chocolate or the sweet taste of apricot.
What most people think of as 'coffee flavor' is the bland sometimes rancid flavor associated with many of the commercial canned coffees. Typically the big name commercial companies purchase the cheapest beans on the market, usually for pennies per pound, and blend the roasted beans until they get that flat canned flavor everyone has grown accustomed to. Other companies roast their coffees to the point that you don't taste the coffees flavors you are tasting the flavor of roast.
Sorry for going on, but the question is without a pat answer.
