I am aformer chef and in liquid it means the milk fat % in the product, and solid products like yougart, sour cream, cream cheeses and other dairy product it is normally known as butterfat %.

Products can be as low as 1% for skimmed milk up to 35% for whippimg cream and double cream brie cheese can be 70% butterfat, it is an indication of one thing, if you have a cholesterol problem then stick to the smaller numbers, eat more cottage cheese.
