How do oil and water stay mixed in sald cream?!

Question: When oil and water are mixed together thoroughly, the oil globules are so small that they form an emulsion with the water. The oil droplets are "kicked" around in the water by Brownian motion - the particles are so small that movement of the water molecules keeps them constantly agitated.
