It's basically a degree of bitterness. All coffee is bitter. Coffee actually comes from a bitter berry grown on bushes. It is the pit that we call the bean. The pit is then dried and cooked (roasted) to "death"

Coffee as we know it, is actually the juice water from burned fruit pits. Strange but true.

You might want to try a different variety. There are thousands to choose from.

And start grinding your own beans, if you don't all ready. The difference is astounding.

It always tastes bitter but a different bitterness depending on the bean just like raw cacao beans taste really really bitter.

Basically coffee is bitter but depending on which coffee bean you are brewing would determine how bitter it actually is...
