Nescafe instant cappuccinos -- what makes the froth?!


Question: You know those Nescafe cappuccino sachets, just add hot water to the contents and you get instant frothy cappuccino? Well, which ingredient creates the froth?

Here they are:
-sugar
-skimmed milk powder
-hydrogenated vegetable oil
-decaffeinated instant coffee
-lactose
-dried glucose syrup
-milk proteins
-stabilisers (E340, E452i, E331)
-salt

(I know some of these obviously don't make the froth, but I thought I'd give the full list anyway!)

If you have ever bought powdered milk and added hot boiling water to it, It froths.
