I'm building a soda fountain machine and I have a question.?!

Question: I'm getting everything off ebay. I don't need much, what I'm looking for is the head, the last thing the pop touches before it goes in your cup. I need to know what this is called. I've tried dispenser head, fountain head, everything. when you go into a party store and fill your cup, what is that on off valve called? ebay links prefferd if possible. TIA, Dave

It is called a flow control valve. Try flow-master. Do you have a cold plate to run the syrup into? do you have a carbonator?Are you using stainless steel on your carbonated water lines? If you have brass or copper it will produce a bad chemical reaction that can make you very sick.
