I make cornbread stuffing and soy turkey. Most of my relatives can't tell it from real turkey and dressing.

Pepperidge Farm Cornbread stuffing mix. I add some plain cornbread and some of my own seasonings.

I make this even when we also have a dead animal on the table. Everyone eats my stuffing.

Of course, cranberry sauce, mashed potatoes, steamed asparagus, etc....

We also had Quorn a couple of times, and it's good, but we keep coming back to the old favorite (the leftovers taste better from the Worthington product).

I like to make lentil stew and herb tofu stuffed peppers for the holidays.

Mold 10 pounds of tofu into the shape of a turkey, brown it in the oven and serve it without telling anyone what it is. If they comment on the taste and texture, just say you tried a new recipe this year and will go back to your old recipe next year.

And next year, buy a frigging turkey and get back to reality.

If you can use chicken stock, make dressing
Greenbean casserole, Sweet potatoes, collard greens, creamed corn, lima beans, potato salad, deviled eggs, cakes, pies and ambrosia.

Health food stores have a Tofuturkey roast. Im having it tomorrow for thanksgiving. Have some fresh veggies, fruit, salads, rice

I'm not an Egyptian . but Egyptians have very beautiful vegetarian dishes that taste good . easy to make and don't cost much and above all they are nutritious . i love eating them from time to time even-though i'm not a vegetarian . some of their names are ( Koshary , Foul and Taamia ). .maybe it is good idea to make them before Christmas to see how would they look like or maybe you will be lucky to find an Egyptian restaurant and try these dishes first .Merry Christmas.

My suggestion is to stop being a vegetarian.

We're doing this for christmas,

beetroot and coconut soup

Puff pastry parcels stuffed with roast vegetables, topped with Asparagus
Beef tomotoes stuffed with couscous and a mushroom pate
roasted veggies: potatoes, honey-parsnips and brussels

poached pears in red wine and cassis drizzle.
Crushed marangue and moose in a chocolate case

Home made beer is just slowng down its fermentation this week so thet'll be barrelled up for Christmas. And the cellar is funny stocked with homemade wines.

17 people so far, the more the merrier, just turn up with your party head on.

Growing up my Mom got burnt out on making a huge feast for Christmas dinner since we were all full of candy. So she had simple dinners on that day. I've followed that tradition by serving simple ethnic meals some times it's Mexican some times Italian. Veggie enchiladas with sides of black beans, veggie studded rice, a nice green salad and a killer dessert. Or lasagna, green salad, garlic bread and an awesome dessert. A mushroom risotto or stroganoff would also be fancy if you like mushrooms just add salad, bread and dessert.

Go out for Indian food (lots of vegetarian options).

Don't forget that the traditional Christmas dinner thrives with delicious winter vegetables. Try broccoli, kale, squash, mangetout peas and sweet potato (mashed or roasted with other vegetables, like squash and regular potatoes).
As for the turkey dilemma, try tofurkey! It comes with a "stuffing" and your nearest large grocery store should carry it.
