Yes it turns out not moist enough, try also adding honey or apple sauce for moisture.

yes i also mixed in alot of yeast, a bit too much, i gave it a yeast infection

It's weird. The yeast reacts with lactic acid in milk, so it won't be excatley the same. I agree with the previous posting of adding apple sauce.

I make yeast bread and rolls with water! Why spoil it with milk or some other liquid?

I will say that I do add oil to my dough (add it to contain the liquid amount - usually 1/3 cup of oil per loaf/rolls). I also let the KitchenAid mix the dough that contains only half the amount of flour it calls for (a batter dough) for twenty minutes to get the gluten threads really established, and then add small amounts of the rest of the flour.

I let it set sometimes for 10 minutes after the 20 minute gluten mixing so the liquid can soak up all the liquid as much as possible.

You will have a soft pliable dough that is makes soft bread, and a high oven temp will make a crispy crust!
