Answers: He is coming back from iraq and i would really like to make hima great mean, i'm not a very good cook, but i can try lol. i am not a vegetarian so all the help and recipies you could give me would be aweosme!
He is straight vegan? Or just vegetarian? If its just vegetarian... I know of a great recepi that I love, and I am a meat eater. Its very filling and hearty, and its a take an an "all american" recipe.
I don't know what its called, I guess, chicken fried portebello mushrooms.
Basically get a few pig portebello mushrooms. I usually can't eat more then one, but if you or he is a big eater, get 2 for each of you.
2-4 Portebello mushroom caps (the larger the better)
2 cups flour
1/4 cup your favorite bread crumbs (get a flavored one)
1 large beaten egg.
tablespoons butter and olive oil
(optional)
1 minced garlic clove
1 small shallot
Mix the flour and bread crumbs together in a shallow bowl, or plate. Wash the mushroom caps with a damp paper towel, dry throurally. Preheat a med.-large skillet over med-med. high heat, with the olive oil and butter. (you need both so you can heat the butter to a higher temp.) Add the garlic and shallots if you desire. Only cook them for a few minutes to flavor the oil. Put aside and save for later. Dredge the wiped and dried mushroom caps in flour first, then egg, and again in flour. Get it well coated. I sometimes have to do this a few times to get a good coating.
Then put the mushrooms in the pan with the top side down. Cook untill golden then flip. Usually about 4-5 minutes. Just don't let the pan get too hot.
If you want to make a gravy afterwards. Get an extra mushroom, dice up half of it. Saute in a pan with a pat of butter, and the reserved shallot and garlic. Sprinkle about a table spoon of flour, and let cook for a few minutes. Afterwards add 1-1/2 cans vegetable stock. Whisk vigurously. I usualy do this with beef stock, but for vegetarians vegetable stock works great.
I usually serve this with mashed potatoes, and broccoli or asaragus (my two favorite veggies.) But serve whatever he likes, and a nice salad.

try some no bake oreo pie/cake its good and also try some soups and most indian restaurants have all veggie menus you might wanna check that out online

make him some meaty food, and some protein (chicken, steak) u could go to a groceries store, they usually have boxes that till u have to make stuff, most of the time all u need is the meat.

vegetable shiskabobs with yellow green red peppers, red onions and tomatoes. If you do eat meat then you can have the same thing but with meat added to it. Your choice.
baked potatoes and steamed vegetables. if he eats seafood, just not red meat make salmon or halibut.
if you cant make anything else, just go for stir fry

a pasta dish with sauteed veggie ( like spinach, onions, squash, mushrooms, carrots, zucchini)

I would head down to your local library and just check out a couple of vegetarian cook books to get some ideas! Find a recipe that sounds tasty and doable, make a practice batch before he gets home so you can be sure that it's good, and then make another serving when he's there. Good luck!
it OK you just have to watch what you eat when your around him. if he doesn't eat meat that would be a problem. but just let him eat what ever he can. do rely on it. he is very special to you. don't let your relationship down just because he's a vegetarian. you could make him salad.dont give him meat!!!!

First of all does he eat dairy??
Here's my recipe for veggie lasagna
1. box wide lasagna noodles
1 medium sized bag of frozen spinach thawed
2. 12oz cans of diced tomatos
1. small can of tomato sauce
2 cups water
1 large carton of cottage cheese
2 cups grated parmesian cheese
2 cups of grated chedder (more or less)
2 tbsp loose vegitable flavored bullion
Garlic
Italian seasoning or (basil, oregano, sage, thyme, parsley)
Pepper
1 9x12 glass pan or a lasagna pan
Aluminum Foil
Pre-heat oven to 350
Open thawed spinache and drain, squeezing out excess water. Place spinache in a large bowel. Empty entire contents of the cottage cheese into the bowel with the spinach, Mix. Add bullion, sage, and garlic and mix some more.
in a large lasagna pan (or 9x12 glass cake pan) place a layer of uncooked noodles.
Spoon a layer of spinach mix, then a thin layer of cheddar cheese and then a layer of diced tomatos. sprinkle with Italian seasoning
Place another layer of uncooked noodles in the other direction. (break to fit the pan if necessary) and repeat the filling layers,
Repeat, alternating noodles until you are out of spinach.
Top with more cheddar, the rest of your parmasian and the tomato sauce, pour water over the entire thing.
Create a Aluminum foil cover, folding the foil so it will not touch the cheese in the center... seal the edges.
Place in the oven for about 1 hour 20 mins or until the center noodles are tender when poked with a sharp knife
Remove foil and continue to bake until you see a slight browning of the cheese (careful burned cheese is nasty tasting)
Remove and let stand for 15 mins before cutting
Serve with a nice salad and some garlic bread.

Something I love is spinach lasagna. I'll give you the recipe and Instructions. It's really long :0)
Ingredients:
2 pkg. chopped spinach
2 tbsp. olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tsp. oregano
1 tsp. basil
1 can tomatoes
1/2 cup tomato paste
1/2 cup red wine (optional)
A package of lasagna noodles
1 egg
2 cups ricotta cheese
1 tbsp. parsley
2 cups shredded mozzarella or jack cheese
1 cup parmesan cheese, grated
9x13 baking pan
Instructions:
1) Thoroughly wash spinach. Discard tough stems. Place spinach in large pan. Cover and cook 2-4 minutes. Drain well.
2) Heat oil in frying pan on medium heat. Add chopped onions, garlic, oregano, and basil. Cook until onion is soft. Mix in tomatoes, their liquid, and tomato paste (mix in the wine, if chosen). Bring to a boil, then cover, reduce heat to medium low and simmer twenty minutes. Uncover, it should be reduced to a thick sauce. Add salt and pepper.
3) Cook noodles. Drain and put aside.
4) In a bowl, beat the egg, and ricotta and parsley.
5) Spoon 1/3 of sauce into 9x13 baking pan. Place noodles (around six) lengthwise to overlap. Spread 1/2 spinach over noodles. Spread 1/2 ricotta over spinach. Sprinkle with mozzarella and then 1/2 of paremessan.
6) Then cover again with sauce, mozzarella, spinach, and cheese.
7) Bake uncovered 35 minutes in 350 degree oven.
This is one of my favourites, it tastes sooo good! I have it without the wine. Anyway, congratualtions on his return. I hope I could help :0)
Birdseye Frozen stirfry. They are great, low salt, low calories,and taste great. Easy to fix. My favorite is stirfry peppers, but they have snap peas, broccli, lot's of others.
Im a vegetarian and I always make this and its AMAZING
1.Boil whole wheat pasta
2.Steam spinach
3. Sautee mushrooms with garlic and olive oil, add black olives and chopped up tomatoes
4. Add the pasta, spinach and rest of #3
Add some black pepper to taste with some salt. and crumble feta cheese on top!
i would say meatless pasta and salad is always good.
and omg what is wrong with some of you people? the girls boyfriend is a vegetarian and your being jerks to her! God that makes me made when people diss on vegetarians, and i'm not even one!
There are lots of great recipes in books, like the Vegetarian Times Complete Cookbook, something like that, and you can find those kind of books in libraries, I am a vegetarian and am looking forward to trying some of them. Especially try pastas, their are so many selections there has to be something he would love in it.
Tell him thanks for going to Iraq and serving us, I pray he has a safe trip home and thank God that he has some one like you to come home to.
Whatever you make, just throw some meat into it and mash it up...vegetarian dishes are horrible!
First date with my hubby, he took me to a mex restaurant, and ordered a veggie burrito and I had to tell him right then and there, if you are vegetarian, take me home...I'm a meatetarian. :)
