Any good vegetarian meals?!


Question: I've been a vegetarian since the end of August, and I've been living off of pizza and muffins. (I've also been drinking protein shakes every night - and vitamin pills) I'm SUCH a picky eater by the way.

I need a good vegetarian meal to try. Any ideas?

Check out www.vegweb.com for recipes and resources. I'm a bit of a picky eater, too, but I have expanded my diet a bit since I became vegan.

You can use seitan instead of beef in stews (I suggest making your own). You can crumble tempeh into chili instead of ground meat. Freeze and press tofu to give it a good texture and then marinate and grill or dredge in flour with seasonings and fry.

If you like heartier dishes, check out "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson. Some of the dishes are complex, but it's really good for making hearty meals.

Amy's makes a great veggie burger called the Texas Burger. You can get sausages and deli slices from Tofurkey. Yves makes all sorts of analogues. So does Lightlife.

I am a vegetarian.

I don't know if you like salad, buy salads are really good for you and good tasting (in my opinion).

There is a brand of frozen foods called MorningStar Farms. They specialize in meat free products such as meat free corn dogs, burgers, nuggets, hot dogs, and so on. They are really good and meat free. They are made of complete veggie protein. They are also healthy.

Have you tried the wide variety of meat substitutes on the market? I know a lot of vegetarians are against them because they look/taste so much like meat, but they are very tasty and can really broaden your horizons. Spaghetti with "meat" balls, taco- ish salads, sandwiches with lunch"meat", and then there's Tofurky.....mmmm!

Being picky is going to be hard - living off pizza and muffins is not helping you get all your protein and nutrients so here goes. BTW please check out Vegan Wolf and Vegetarian society UK and Vegetarian society QLD there are some great recipes so here
goes

Vegan Peanut and oatmeal Cookies

INGREDIENTS:
1/3 cup peanut butter
2 ripe bananas (overripe is fine)
1 tsp vanilla
2 tbsp soy milk
2 tbsp maple syrup (optional)
2 ? cups quick cooking or rolled oatmeal
dash cinnamon (optional)
1/4 cup flour
PREPARATION:
In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined.
Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.

Note: This recipe is only truly sugar-free if you used unsweetened peanut butter and unsweetened soymilk, so read the ingredients list and look for soy milk that says "Unsweetened" right on the label.

Cheese & Sweetcorn Flan
Ingredients

Pastry

200g 85% wholewheat flour
100g margarine
pinch salt
few drops lemon juice

Filling

250g hard cheese
1tbs flour
1 small tin sweetcorn
2 free range eggs
150ml single cream or milk

Method

1. Make pastry by sifting flour and salt together, rub in margarine, add lemon and enough water to form a dough.
Leave to rest in a cool place for an hour or so.
2. Lightly grease a deep flan dish and line with rolled out pastry.
Grate the cheese and toss with the flour.
Place half in the flan.
Drain the sweetcorn and arrange in the dish.
Cover with the remaining cheese.
Beat the cream and eggs, pour the mixture over the cheese and sprinkle with nutmeg.

3. Bake at 375°F/190°C/Gas Mark 5 for 40 mins.


Chinese Filo Vegetable Parcels

Ingredients

450g/1lb potato, peeled, grated, rinsed and dried
15g/?oz root ginger, peeled and finely chopped
4 large spring onions, sliced
40g/1?oz frozen peas
50g/2oz roasted cashew nuts, roughly chopped
1 x 120g sacbet orange and ginger stir fry sauce
12 sheets filo pastry 30 x 12cm/12 x 8in
25g/1oz butter or margarine melted
2 x 5ml spn/2tsp sesame seeds
salt and freshly ground black pepper

Method

O V E N
220°C/425°F/Gas Mark 7

1. Thoroughly mix the grated potato, root ginger, spring onions, peas and nuts together with the sauce.
Adjust seasoning if necessary.

2. Brush each sheet of filo pastry with melted butter or margarine then fold in half lengthways.
Place a little vegetable mixture at the end of each strip,
fold in the edges, then fold into triangles and place on a greased baking sheet with the seam underneath.

3. Brush the tops with the remaining butter or margarine and sprinkle the sesame seeds over the top.
Bake for 15 minutes until golden brown.

4. Serve immediately with a selection of stir fried vegetables.

Muesli Flapjack
This is a gorgeous sticky flapjack bound to be popular whether you have been out on the hills or not.

Ingredients

4oz / 100g margarine
4oz / 100g dark brown sugar
2oz / 50g honey
4oz / 100g porridge oats
4oz / 100g muesli

Method

1. Melt the margarine with the sugar and honey.

2. Mix together the porridge oats and muesli, then pour over the melted margarine. Mix very thoroughly and spread into a 7"x 7" greased baking sheet.


Barley Broth

Ingredients

30ml/2tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
1 bay leaf
50g/2oz mushrooms, quartered
1tsp thyme
1tsp basil
30ml/2tbsp tamari
1 potato diced
2 carrots, sliced
?swede, diced
50g/2oz pearl barley (soaked in water for 1 hour)
1.35L/2?pt vegetable stock
salt & freshly ground black pepper

Method

1. Heat the oil, add the onion and sauté gentle, add the garlic and the bay leaf, and continue cooking for 3 minutes.

2. Add the mushrooms, thyme, basil and tamari and cook gently for a further 3 minutes.
Add the remaining vegetables, barley and stock.
Cover and simmer for about 30-40 minutes.
Season and serve with hunks of crusty wholemeal bread.

Carrot & Red Currant Salad

The rather tart redcurrants are excellent with carrot and they make a refreshing salad with an unusual colour combination.

Ingredients

1 lb/450g carrots, scrubbed and coarsely grated
4 oz/100g redcurrants, removed from their stalks
1 tbsp/15ml redcurrant jelly
2 tbsp/30ml lemon juice

1 Combine the carrots and redcurrants and mix well together.

2 Stir the redcurrant jelly into the lemon juice.

3 Toss the salad in this mixture then set it aside in the refrigerator to chill before ser

Kinda like the first guys. I hate morning star but i love garden burger! Also in the frozen foods isle there is a brand called amys and it is organic and vegan! It is great atsting too! slad is great refreshing and good for you!
