My favorite

Pasta :

Equipment:
Saucepan or frypan.

Ingredients
1 tablespoon olive oil
2 garlic cloves, minced
Pinch hot chili flakes
1 cup grape tomatoes, cut in half
1/2 cup kalamata (black) olives, pitted and coarsely chopped
Small handful shredded fresh basil or parsley
(or 1/4 teaspoon each basil and/or parsley, dried)
1 teaspoon finely-grated lemon peel.

Whatever pasta shape you prefer, and enough to serve 4 as side dish--I used approx 2/3 cups dried Eden brand vegetable rotini per serving.

Directions
Put water on to boil for pasta, then cook pasta until al dente or desired consistency. (Rotini works well).

Heat olive oil in large frying pan (or saucepan) over medium heat. Add garlic and chili flakes and cook for 1 minute, until oil becomes fragrant. Add olives and tomatoes and stir until hot, about 2 minutes. Remove from heat. Toss with herbs and lemon peel, then toss with drained pasta and serve.

Fried or grilled tofu with potatoes/rice and veggies.

Marinated tempeh fried or grilled, also with potatoes/rice and veggies.

Veggie stir-fries.

Veggie stews.

Vegetable dinner pies.

The options are only as limited as your imagination. And I say it's perfectly okay to replace the meat you normally would have with tofu, tempeh, or seitan.

My wife makes a bunch of great stuff. She makes us pizzas which are based on her experimentation, using her home-made bread dought for a crust. You'd be amazed what all is good on a pizza.

She makes a broccoli and rice dish that is very good.

She uses cashews for the "meat" in dishes sometimes, like cashews and rice and various kinds of vegetables, and of course they are incredibly good.

She likes "Vegan with a Vengeance" cookbook so you might want to buy that. And experiment too.

Vegetable soup is quick and easy. It's also a hearty meal if you live in a place where the Winters are super cold.

I get some whole-wheat, egg-free noodles from Whole Foods and boil those while I am prepping the veggies.

Get some bell peppers (any color), carrots, onion, garlic, zucchini, and mushrooms. Boil them until tender, but not mushy.

Drain your noodles and leave them to rest.

If you have either a hand blender or a potato masher, you want to puree the veggies. Make sure you get a nice smooth purree before you add the noodles. Once you mushed the veggies, add the noodle to the veggie purree and mix to coat.

Season to taste and enjoy.
