I know some people eat lettuce, tomato, sprouts, onions and a dressing on a sandwich.....everything really but the meat. But to be honest.....ham and cheese is hard to resist. But turkey and cheese is good too.
peanut butter and honey (with apples or bannanas is even better) on whole grain, hummus is good on sandwiches, I like to make hummus and cucumber sandwiches.
humus makes a good non-dairy sandwiches spread, then add cucumbers or lettuce.

Coarsely chop drained chickpeas, add mayonaise/vegenaise to desired consistency, and season with chopped green onions, chives, garlic powder, curry/cumin, or anything else you'd like!
There are lots of things you can make sandwiches with. Be creative and try new things. I don't know if you are a vegetarian or vegan so all the suggestions are vegan and you can just substitute whatever you want to. A list of possible choices are:
Hummus on pita bread
Lettuce (well dried after washing) & tomato (put in a different container till ready to eat so your sandwich doesn't get soggy) and veganaise sandwich.
Make a sandwich filling using tofu, veganaise, mustard, onion and pickle (chopped).
Fresh spinach leaves
Lettuces
Alfalfa sprouts
Thinly sliced radishes, cucumbers
Tofutti cream cheese
Tofutti cream cheese mixed with chopped cucumber and sunflower seed sandwich
Butters: peanut & other nuts, apple, peach, pumpkin and apple.
Sliced apple with pumpkin butter on 8 grain bread is good
After Thanksgiving I made a sandwich with leftover fresh cranberry sauce, dressing and sweet potatoes on dinner rolls
There is a wide variety of breads, condiments, fruits & veggies, and seeds & nuts. You can make a sandwich out of almost anything.
I put Vegenaise (vegan mayonnaise from the brand Follow Your Heart), tofurkey, and lettuce on mine.
