What else should I add to this vegetable dish?!

Question: Ok, I'm cooking this right now... It has canned tomatoes, kidney beans, onion, brown lentils, Lima beans, normal beans, garlic, salt & pepper...

Also going to combine it with brown rice, once it's cooked. What herbs, etc do you think would compliment this dish further?

Thanks for any suggestions...

curry powder would bring out a middle-eastern flavor... or at least a sprinkling of curry and red pepper flakes to give it a spiciness... you can also try adding Italian seasoning.

salt chessesee

curry/celery salt/and a little crushed red pepper

Sounds great.....I would pour it over a baked yam instead of adding rice.

basil sounds good

The same ingredients you speak of are used in Minestrone soup,...the seasoning in the soup calls for a bouquet garney, which is basically thyme, basil, oregano and rosemary tied in a little cheese cloth bundle and cooked in the soup and removed before serving. You might try the same method.
Or just using those same herbs in dried form and sprinkle towards the end of cooking you vegetables. Salt and pepper to taste and possibly a dash of Tabasco would complete the dish quite well.
Good luck and eat well :o)

Mixed Italian or Proven?al herbs, decorate with flat parsley or basil. You could add some chopped chilis or chili flakes if you're looking to the east, decorate with coriander.
Try adding a cinnamon stick, star Annis and fennel seeds to the rice.

Gosh - anything else and you'll loose it completely. Let good enough alone.

PS - eat simple.... and.....eat well.

Apricots

You could add celery and garlic salt or fresh herbs and finish off with some parsly. i make something like his but mine is a soup and its very good. i would not bother with the rice.

I think you have enough herbs . . . I would add chicken or an extra lean ground beef.
