Christmas dinner: vegitarian options. Any inspiration?!

beetroot and coconut soup
mozarella and tomatoe slices on a herb salad
Puff pastry parcels with roast vegetables and topped with Asparagus
Beef Tomatoes stuffed with coucous and mushroom pate
Roast potatoes, parsnips & brussels sprouts ( of course )
spinich wrapped around something - not sure yet
Juniper Berry Gravy
Poached pear with cassis
home made veggie wines and beers.
Vegetarian lasagna, that's what I usually make =)
...all the trimmings without the turkey! ...stuffing.....potatos.......veggies...... sauce and a few added items ...like rice......spinach quiche whatever you like...
Vegetarian lasagna - use lots of mushrooms, chunky veggies, different types of cheese. Even the meat-lovers like that one. You can also use ziti pasta instead of lasagna and mix it with the veggies and sauce, then layer that with the cheese and bake it till the cheese is all melted. That's a fave in my family (though we eat meat). My vegetarian friend also likes eggplant parmesan.
A huge plate with lots of different vegetables, I like that !
Cucumbers, different types of salads, carots, ... ... ...
Or just any type of Christmas meal but without the meat.

order a tofu turkey. pure classice and bake a small one for ur meat eaters
How vegetarian is vegetarian?
If you eat fish, then Scottish smoked salmon, very classy. Or rainbow trout. Both very easy to cook. Sushi is great too. I love seaweed.

i will tell you what my family eats every year for christmas eve and christmas day:
christimas eve:
-vegetable tamales (make your own with spinach, tofu, onions, carrots, salsa, vegan cheese, etc.) or find them at your favorite local mexican food restaurant, you can usually order them ahead of time)
-refried peruvian beans (just peruvian beans, water, and salt)
- spanish rice
- salad, tortilla chips, salsa, and guacomole
-churros for dessert
christmas day:
-tofurkey (it is soooooo good, please don't be scared to try it if you haven't already, and make sure you get tofurkey gravy or make your own)
-stuffing (just use your favorite recipe)
-cranberry dressing
-rolls
-mashed potatoes
-green beans casserole with vegan cream of mushroom sauce
for dessert:
some of marie callender's pies are vegan- i like the blueberry pie
or make your favorite christmas cookies or cakes!

A nut roast. for years I've made a nut roast for xmas. there is such a lot of different ones and Its nice cold the next day with salad. i often stuff min which really means to put a centre layer in the dish or loaf pan which I use. my centre layer is normally celery and mushroom done in a white sauce. grind a cup of mixed nuts add a cup of cooked rice a cup of either breadcrumbs or stuffing mix, herbs to taste I usually add a teaspoon of marmite or vegemite to half a cup of boiling water and pour over the mixture add an egg or 2 to bined together some grated cheese parsley or what ever you fancy. and place in your loaf tin and bake
