Which [edible] seedlings are as chunky and substantial...and look similar to sunflower seedlings.....?!

Question: ....i want to grow something similar, but without the slightly bitter or astringent aftertaste, but it must be dicotyledonous [ie 2 seed leafs] and it must be a quick-gowing and sizeable seedling, rather than tiny cress type seedlings.

which bean or other [vegetable?] seed will produce the quick growing Edible seedlings i'm after?
