Yep, you can eat pumpkin sprouts. I'm not a huge fan of the taste, but I like them better than regular bean sprouts.

Wheat sprouts grow fairly quickly. Wheat tastes really good, actually, when it's sprouted, but the sprouts are really tiny - an inch, maybe, long - they can sprout in the cold, too.

I've seen corn and alfalfa seeds sprouted fairly quickly, too, though haven't sprouted them myself.

Beansprouts and members of the cress family are what you are looking for. I have no idea about pumpkin seedlings, but as I have never heard of them being eaten i would presume that they are not good as food.
